The Christmas period has always been a moment of celebration for us to live together. Hence the idea of shortening distances with the recipe for a dessert perfect for our family time. A simple recipe that tastes good.

To feel you closer in this long period of covid19 lockdown constraints, we are happy to share with you our typical South Tyrol Schmarren Hotel Sassongher Recipe. The typical Schmarren also known as “sweet omelette“, here proposed in the Chef Mattera special version.
A typical dessert perfect for the winter season together with your relatives and friends. For an excellent result it is important to taste it hot, just cooked. It is therefore better to reserve it for convivial moments with a few people.
Best is to enjoy it with a good sweet wine like italian passito or a Moscato wine.

Here the personalized recipe by Chef Raffale Mattera of the Hotel Sassongher 5 * in Corvara, Italy. Enjoy it!
Ingredients for 4 people
- 140 gr. 00 flour
- 100 ml. of whole milk
- 100 ml. di liquid cream, better if fresh
- 6 yolks
- 6 egg whites
- 1/2 vanilla sugar sachet
- 40 gr. grated hazelnuts
- 1 cl. blueberry brandy or rum
- 1 pinch of salt
- 40 gr. sugar
- 200 gr. blueberry (or cranberry compote)
Mix the flour, milk, cream, egg yolks, vanilla sugar, hazelnuts and blueberry brandy until the dough is smooth. Beat the egg whites with the salt, add the sugar and continue until the mixture has reached the consistency of firm snow. Incorporate to the previously prepared dough.
Let’s now move on to the cooking phase. Heat the oil in a large skillet, pour in the batter, sprinkle with the blueberries and cook the bottom until it turns a golden color, then turn. Finish cooking in a preheated oven, 5 minutes at 180 °, static program.
To serve, break up the blueberries omelette with the two forks. Sprinkle with icing sugar, add some butter and sauté the Schmarren a little more in the pan so that the sugar becomes caramel. Arrange on plates (preferably hot!). Sprinkle with icing sugar and garnish to taste.

The final touch always plays its part! For decoration you can use raisins, candied fruit, the classic red fruits – easily purchased cranberries, diced apples or cinnamon, perfect for any moment of joy!
