Family tradition. Growing up with the cuisine at the heart.


Chef Raffaele Mattera is a true son of the art in the kitchen. He grew up in the family’s restaurant founded by his grandfather cook, pastry chef and ice cream maker (“when modern machines for ice cream did not exist but there was only ice”), as well as the first teacher of the prestigious Cooking School of Casamicciola, in Campania. Together with his father, head barman, and his mother, cook of the family restaurant, Raffaele grew alongside kitchen scent and authentic tastes and flavours. 

It is precisely the undisputed protagonist of the kitchen, the mother, the person who transfers to Raffaele a deep culture and love for good food, a passion that will remain imprinted within him forever.

The experience and the passion of the Chef of the Sassongher 5 * restaurant is therefore based on solid culinary roots. This spirit leads Raffaele Mattera to live intensely his work to create the best traditional and innovative cuisine, to amaze the most demanding palates of our national and international Guests.

Chef Raffaele Mattera. The history.

After graduating in Hotel Management in Ischia, I was in my mother’s shadow in the kitchen but soon we both understood that the family restaurant was too tight for me…“.
Raffaele’s passion drives him to leave the wonderful island of Ischia for prestigious international experiences in exclusive hotels of the Swiss top mountain tourist destinations like St. Moritz, Gstaad, Lenzerheide just to name a few.

At this stage a new call from the Regina Isabella 5 * luxury of Ischia arrives. It brings Raffaele back for 10 years to the beloved native island as sous chef saucier of Chef Luigi Castagna, and then become Chef of the Kitchen at Miramare Sea Resort.  A long and strong experience in first-rate hotel structures that forms the high-level style of Raffaele Mattera.

The call of the mountain is stronger and soon Raffaele leaves again the isle of Ischia for new horizons. Here we are, again in the mountains in the lovely Corvara, Alta Badia, as Chef of the Hotel Sassongher “the best Hotel in Val Badia“.

The Chef Raffaele Mattera is ready to surprise us. Which delicious dishes awaits us at Hotel Sassongher’s Restaurant? Always a different menu, in line with the season and the availability of the excellent products.

Delicious meats and excellent game poultry personally supervised by Richard Pescosta, expert connoisseur of local fauna and nature. Fine fish such as Porto S. Spirito prawns, recognizable by their red, pink and violet colours. Delicious homemade pastas. Sweets? Superlative all of them!  Strudel cake “made as it should be“, exquisite babà and millefeuille, handmade pandori and panettone during the Christmas period, delicious spoon desserts…   Ask and try the “Sassongher Dome”, an unparalleled delight!


I love fresh and natural products to appreciate their qualities.
I love traditional and typical cuisine, although I also get inspired by French and Swiss cuisine. Above all, I love to read the satisfaction in the eyes of our guests
